Soak dried squid in water for 2 hours

Dried squid cut into small strips

Scrub the surface of the eggplant with salt and cut into strips without peeling

Ingredients: green onion, garlic, chili

Add oil to a cold pan (put more oil, the eggplant will absorb the oil), and turn to low heat

After the oil is hot, pour the dried squid down and fry, add some salt, and fry until the surface of the dried squid becomes crispy. Pick up the dried squid and put it in a casserole, leaving the oil.

Put the eggplant in the pot and fry until it becomes soft and the surface changes color. Pick it up and pour it into the casserole. (If the eggplant has absorbed all the oil, you can also fry it slowly over low heat)

Add soy sauce, oyster sauce, and cold water (just enough to cover the eggplant) into the casserole, bring to a boil over high heat, cover and simmer over low heat for 10 minutes.
