Soak the glutinous rice overnight. If you don’t have Thai glutinous rice, just use ordinary glutinous rice, which is more convenient and saves trouble. You can also use 2/3 glutinous rice and 1/3 Thai fragrant rice. There is not much difference between the two methods.

Put 200ml of light coconut milk in a pot, add a tablespoon of sugar and a teaspoon of salt and heat until the sugar melts.

Pour 170ml of coconut milk into the soaked glutinous rice, and cook the glutinous rice with coconut milk. Just like cooking rice, put it in the rice cooker.

After cooking, use a rice spoon to fluff it up.

Peel the large mango, cut off the pulp, then slice and set aside.

Ladle the glutinous rice into bowls, then invert onto a plate and add flavor with a bunch of mint leaves. Finally, place the sliced mango and pour the remaining 30ml coconut milk on top.
