Prepare scallions, star anise, peppercorns, bay leaves

Trim off the whiskers and feet of the prawns, remove the threads, wash and set aside

Add water to the pot, add spices and two spoons of cooking wine

Bring to a boil over high heat and cook for three minutes, then add the prawns

Add two tablespoons of salt and a few drops of white vinegar
