Take a loofah and wipe it clean with a hard sponge cloth. Do not leave any debris on the surface. The skin must be eaten, so it must be washed clean.

Peel with a peeler.

Slice the loofah, chop the skin, and place on plates.

Wash green and red peppers.

Chop the green and red peppers, give all the green peppers to the loofah peel, and give two-thirds of the red pepper to the loofah peel.

Heat enough oil in the wok until green smoke comes out. Pour the chopped green pepper, diced red pepper and chopped loofah rind into the pot and stir-fry over high heat for half a minute.
