Spicy cold rice noodles

Summer is coming soon, and every meal cannot be separated from delicious cold dishes. My family loves spicy, homemade spicy red oil, and homemade salted duck eggs. The whole family eats deliciously. The whole family sits at the dinner table and eats the homemade dishes with relish. Happiness is so simple

Raw materials

Wash the rice noodles, put them into a pot and cook them. Add more water when cooking, and cook them until they can be cut with chopsticks

Take a shower with cold water, then soak in cold boiled water for a few hours

Cut the red pepper and carrot into shreds, mix well with a little salt and marinate for two minutes

Then add cucumber shreds and soak them in salt water for a few minutes (I use the salt water from my own kimchi jar, which has a good taste and soaks in salt water for two minutes)

Add spicy red oil, Sichuan pepper oil, sesame oil, light soy sauce, minced onion, ginger, garlic, red pepper shreds, carrot shreds and cucumber shreds into the rice noodles, stir well

Add the boiled salted duck eggs and serve
