During the Dragon Boat Festival, our custom is to have a bowl of garlic roasted pork. Any dish that is paired with meat will always steal the spotlight from the meat. Just like this garlic, it is soft, glutinous and fragrant without the pungent smell of garlic. It is more popular than meat. The local pork we buy has more fat. But I like to eat fatty meat. If it is cooked well, the fat meat will not be greasy. Moreover, the bricks say that if the pork is stewed for more than two hours, the saturated fatty acids in it will turn into unsaturated fatty acids.
