【Sichuan】Pork trotters with pickled pepper
Overview
Pork trotters with pickled peppers is my family’s favorite dish to go with wine, or more importantly, a snack. Once you start eating it, you can’t stop eating it. The stewed pig's trotters are soft, glutinous and chewy, and soaked in pickled peppers to give it a strong sour and spicy flavor. Eating a piece on the festive table can relieve fatigue and appetizer. It is spicy and enjoyable. When stewing, add some white vinegar so the stewed pig's trotters are chewy and not sticky. Soak it with pickled peppers and boiled soup, and it will become very delicious within 2 hours. The aroma of pickled peppers and ginger wraps the strong pig's trotters. I believe the taste of this pickled peppered pig's trotters will surprise the whole family on this holiday table.

Chop the pig's trotters into pieces, remove the hair and wash them. Add a few slices of ginger to a pot of cold water and blanch the water. After the water boils, cook for another 5 minutes

After taking it out, wash the blood foam with hot water

Put it into the pressure cooker and add white vinegar, Sichuan peppercorns, ginger slices and a few dried red peppers (you can leave it out if you are afraid of spicy food). Simmer time setting: 40 minutes

Make soup: Add ginger slices, sugar, salt and the material box into a small pot, add 1.5 bowls of water, bring to a boil and then turn off the heat for 5 minutes, let cool and take out the material box

Let the stewed pig's trotters cool and then put them into the seasoning soup. Pour in the pickled peppers and the pickled pepper water together. Leave it for 2 hours to absorb the flavor and then eat it. In the summer, it should be stored in the refrigerator. It will be more delicious after being refrigerated
