Homemade healthy black tofu - black bean series 1
Overview
The black beans are produced by my mother, and the tofu is produced by Xiao Yatou. One advantage of making your own tofu is that it is more flavorful and healthier. When frying, it will not produce a lot of water, which will cause the tofu to not cook well. It is also rich in crude fiber, which is a good product for weight loss~~

Prepare the materials and pick out the bad black beans and pods;

Wash the prepared black beans and soak them in water for about 6 hours;

The soaked black beans are very plump and the surface is also very smooth;

Rinse the soaked black beans twice with water;

Put the black beans into the soymilk machine, add water, and beat twice. The finer the beat, the better;

Pour the beaten black soy milk into the drain cloth, wrap it well and squeeze out the soy milk water. You can filter it again with a filter;

Start cooking the soy milk. First, use high heat to cook the beans until they are almost boiling. Stir while cooking to prevent them from sticking to the bottom. Then use medium to low heat to cook until they overflow (i.e. boiling state) and turn off the heat;

Let cool to 85 degrees Celsius, then use chopsticks to pick out the bean skin floating on the surface of the soy milk;

Pour 35ml of warm water into the cup containing lactone and stir with chopsticks until dissolved;

Add the lactone into the black soybean milk, and stir while adding the lactone liquid (can be added in two times, adding every 5 minutes);

Use a spoon to fill the bottom of the pot and lift it up, making sure to stir evenly;

Cover the pot and simmer for 15-20 minutes;

When the time is up, the black soy milk will solidify into tofu curds. Use a whisk to break up the tofu curds. The more broken they are, the better;

While the black beans are simmering, turn over the steam rack of the rice cooker and place it on the pot of the rice cooker;

Then place the cake mold and cover it with tofu gauze specially used for making tofu;

Pour the crushed bean curd in step 13 into the mold, wrap it with the extra gauze, and put the cake bottom on it;

Then press a basin of water on top and press for 1 hour to release the mold;

The tofu is ready.
