The farm sent newly selected organic duck eggs, which happen to be the holy grail of pickled eggs!

Wash the duck eggs and dry them with kitchen paper! Be sure to dry it! Not a drop of water is allowed. Prepare high-strength white wine and table salt.

Salt on a large plate and spread! Pour the wine into a large bowl without water or oil. Plastic wrap is ready!

Soak the duck eggs in white wine for one to two minutes! This is how oil comes out!

Take it out and roll it in the salt. Everywhere should be covered with salt!

Wrap tightly with plastic wrap! ! Pack two more layers!

If the day you wrap it is sunny, you can dry it for a day. On a cloudy day like mine, I just put it in an airtight container!
