Sauerkraut, bean and rice soup
Overview
Pickled cabbage and bean rice soup is a common family dinner dish in Guizhou. It doesn't look great at first glance, but the mixture of glutinous bean rice and sour pickled cabbage, plus a little appetizing chili, makes two or three bowls of white rice necessary. There is a proverb in Guizhou that if you don't eat sour food for three days, you can walk through the river. It is also said that this dish can prevent stone disease and prolong life, so it is very popular.
