Overview
Sweet rice wine is a kind of sweet rice wine made by fermenting steamed glutinous rice with sake fermentation (a special microbial yeast). The brewing process is simple, the taste is sweet and mellow, and the alcohol content is very low, so it is very popular among people. The key to making glutinous rice wine is that the utensils are clean and there must be no grease at all. It is best to clean all the steamers, baskets, drawer cloths, basins, lids, mixing spoons, etc. that will be used before cooking.

Wash the glutinous rice and soak it in cold water for 6-8 hours.

Drain the soaked glutinous rice, put it into the steamer, steam it for 25 minutes.

Steamed glutinous rice and let dry until lukewarm.

Mix with cold boiled water, sprinkle with rice wine koji and mix evenly.

Flatten the mixed glutinous rice, dig a hole in the middle, mix the distiller's yeast and cold boiled water and pour it on top.

Wrap it tightly in a larger towel, wrap the outside in a plastic bag, and store it for about 35 hours.

The rice wine with a mild aroma, sweetness and refreshing taste is ready. If you can’t finish the rice wine at once, add some cold water and put it in the refrigerator.
