Remove the whiskers and feet from the prawns, remove the threads from the prawns, wash and set aside

Shred the onion and ginger and set aside, any green onion or spring onion will do

Heat a little more oil, add the prawns and stir-fry

Add half a spoonful of cooking wine

Add onions and ginger and stir-fry until flavourful

Add a spoonful of salt

A spoonful of sugar

Add half a bowl of hot water, cover and simmer for a few minutes

When the soup is red and thick, add a few drops of white vinegar and reduce the juice over high heat
