Japanese octopus rice

Vegetable rice is very common in Japan. If you master the sauce, you can use it flexibly.

Mix Japanese white soy sauce, cooking wine, mirin, and seasonings in proportion. Pour into the washed rice placed in the rice cooker.

Add water to the required amount for rice.

Cut raw octopus into half thumb-sized pieces. (Octopus will shrink when heated)

Raw edamame and diced carrots. (You can also add mushrooms and other root vegetables. According to personal preference)

Dice the octopus and carrots and put them on the rice, put the edamame on the rice, and add some dried shrimp (you can omit it for freshness). Just cook as usual.
