Overview

I bought some duck wings, but when I cooked them, I felt that no matter how I cooked them, they were not as delicious as braised meat. There was still a little bit of the old soup that was used to braise the meat, so I used braised duck wings.

  1. Clean the duck wings, add shredded ginger and rice wine and marinate to remove the fishy smell

  2. After removing the fishy smell, blanch the duck wings in cold water to remove blood foam and impurities

  3. After blanching, wash both sides with hot water to completely remove residual blood foam.

  4. Prepare a portion of meat ingredients: a piece of ginger, 5 dried chili peppers, appropriate amounts of peppercorns, star anise, bay leaves, cinnamon, fragrant sand, and white cardamom

  5. A bit of old soup specially reserved after braised pork. My old Tang is already 11 years old this year

  6. Add the meat ingredients to the old soup. Because of the old soup, you don’t need too much meat ingredients
