To wash mustard greens, you must break off each leaf and wash them to remove the sediment inside.

Chop the mustard greens as finely as possible.

Sprinkle salt to remove the moisture. You don't need a lot of salt. Mine is 4 pounds of mustard greens, and I put about 20 grams of salt.

After letting it sit for half an hour, about 1 kilogram of water will be released.

Use a bamboo dustpan to dry in the sun.

It has been dried in the sun. When eating, soak it in water first. It is delicious when used to steam pork belly or stir-fry pork belly.
