Wash and slice garlic, winter bamboo shoots, fatty meat, and dried peppers and set aside. (Winter bamboo shoots need to be blanched in boiling water for a while)

Heat the pan and add the fat slices to fry until oil is released.

Fry the dried peppers, add the blanched winter bamboo shoots and stir. (My family doesn’t eat very spicy food, so I didn’t stir-fry the dried peppers

Add garlic, salt, chicken essence, light soy sauce and oyster sauce to taste.
