Stir-fried clams with broccoli
Overview
I have only eaten fried clams with golden cauliflower before. I thought fried clams might be good too, so I tried it and it was really delicious.

Wash broccoli. It makes no difference whether you wash the clams or not.

Pour the washed clams into the boiling water and wait until everyone opens their mouths to turn off the heat (there will always be a few die-hards who won't open their mouths).

Peel the meat out.

This little meat is peeled off from more than a kilogram of clams.

Sauté garlic and ginger

Pour in the clam meat.

Pour in the cooking wine. Pour in a little more light soy sauce.

Pour in the broccoli.

Stir fry for one minute. Sprinkle in a pinch of salt. Because the clam meat has been put into light soy sauce before. So add less salt.

Remove from the pan.
