Luffa Braised Poached Egg
Overview
Luffa is very nutritious. This dish is suitable for children. Bring some soup and eat it with rice. This is my first time posting a recipe, I hope you all can support me.

Peel the loofah and wash it

Put oil in the pot, put some salt in the oil, stir the salt evenly with a spatula, break the eggs into the pot, fry them and put them in a bowl and set aside

There is still oil in the pot, sauté the garlic until fragrant, then add the loofah and stir-fry, add 1 teaspoon of salt. Don’t use too much salt as it will take away the sweetness of the loofah.

After the loofah becomes soft, put in a small bowl of broth. You can also add no water. Put the poached eggs in the pot and use a spatula to split them. Cover the pot and simmer

After simmering, sprinkle some chopped green onion and take it out of the pot. You can leave as much soup as you like. I prefer to leave some soup to mix with rice.
