Custard finger biscuits
Overview
There are two types of finger biscuits made, one with whole eggs and one with separated eggs. Suddenly, I discovered that Teacher Meng’s finger biscuits are actually the full egg yolk version. Gotta try this. However, what is a bit confusing is that I forgot to sprinkle the powdered sugar in the last step. While baking, I suddenly found a little bit of powdered sugar on the side. Alas, I had to make do with it.

Prepare materials

Pour powdered sugar into egg yolks

Mix well by hand

Then use an electric whisk to beat until the color becomes lighter

Mix low-gluten flour, baking powder, and milk powder, and sift into the egg yolk paste

Add almond flour

Mix into batter

Put it into a piping bag with a flat mouth

Pipe into 4CM strips on the baking sheet

Place in the oven, middle layer, bake at 160 degrees for 20 minutes, then turn off the heat and continue to simmer for 10 minutes

Golden on the surface, out of the oven
