Fried shrimps in oil
Overview
When I went to the market, I saw these lively white rice shrimps. They were quite big and I bought some. I wanted to add some leeks and stir-fry them. Lao Geng suggested making fried shrimps in oil. The effect was really good. The white rice shrimps have soft shells and tender meat. I fried them in a pan, added some sugar and light soy sauce and stir-fried them. They were fresh and fragrant, with crispy shells and tender meat.

Prepare the ingredients.

Cut off the shrimp whiskers first and set aside the shrimp feet.

Clean the onion and ginger, and slice the ginger into slices.

Heat the oil pan, add the prepared shrimps, green onions and ginger and fry for ten seconds and remove.

Then increase the temperature of the oil over high heat, pour the shrimp in and fry again for ten seconds.

Pour out the drained oil together.

Pour the fried shrimp back into the pot, add sugar, light soy sauce, and cooking wine.
