Eggplant and beans
Overview
During the Chinese Valentine's Day this year, my husband and I went to Hunan Dawancai for dinner. I ordered a stir-fried green bean. It tasted very good. My husband kept thinking about it after I came back, so I thought about it. Unexpectedly, my husband said it was delicious, so I made it again tonight. Of course, it was different from what I had eaten at Dawancai before. I added the ingredients myself, 😁

Prepare the ingredients, break the long beans into long sections, cut the eggplant into strips, slice the pork belly, mince the garlic, and cut the peppers into small rings (because we can’t eat too spicy, we only put two peppers)

Stir out the pork belly and set aside for later use

Leave the base oil in the pot, add the eggplant and stir-fry, because the eggplant absorbs oil, but it is easy to soften, so you can leave it out when you see it changes color

Then add the beans and stir-fry, forget to pat them, stir-fry until the skin peels a little, then you can put the eggplant in together

Finally, add the pork belly, garlic, and chili peppers to the pan, stir-fry evenly, add the seasonings, and it's almost ready to serve. Turn off the heat, sprinkle in the cumin powder, and serve.
