Overview
A relative gave me a handful of home-grown mustard greens, and I made them into laocai according to local customs. The name laocai may be a local dialect. I understand that laocai means blanch it in water and then fish it out, so it is called laocai

Wash the mustard greens and cut them into sections. Add more water to the pot. After boiling, put the stems into the pot and blanch them for three minutes

Add mustard leaves and blanch for two minutes

After blanching, cool in cold water

Chop into pieces and squeeze out the water

Heat the pan and put more oil, first add the dried chilies and then the mustard greens and stir-fry

Add salt and stir-fry until the water is almost dry, then it is ready to serve. It tastes good and goes well with rice!
