Oyster Sauce Bicolor Flower
Overview
There are two types of cauliflower: white and green. The green one is called broccoli or broccoli. The nutrition and functions of white cauliflower and green cauliflower are basically the same. Green cauliflower has a higher carotene content than white cauliflower. High-quality cauliflower has clean, solid, tight, jacket-shaped leaves (the outer leaves remain tightly wrapped around the cauliflower), fresh, plump and green. On the contrary, poor-quality cauliflower has loose inflorescences, which is a sign of over-mature growth. In our family, we often eat both white and green cauliflower together. This way the dish is beautiful in color and more nutritious. Broccoli in oyster sauce, simply blanched while retaining the nutritious and satisfying crispy texture, is our home-cooked dish.
