Steps
-
Prepare ingredients. Ordinary flour: 500g, yeast: 4g, aluminum-free baking powder: 1g, red yeast rice powder: 3g; cocoa powder: 0.5g; matcha powder: 3g, food coloring: a little.
-
Prepare ingredients. Jujube: 250g. After washing, put it into cold water and start cooking. After the water boils, immediately remove the water and drain it. Don’t cook it too high, and steam it later to avoid overcooking.
-
Mix the yeast and baking powder into the flour, stir evenly, add an appropriate amount of warm water, and knead the flour into a smooth dough. Take out most of the original dough, cover with plastic wrap, and ferment in a warm place.
-
Take a little raw-colored dough according to your preferences and needs, and mix in matcha powder, red yeast rice powder, and cocoa powder to form various colored doughs. Let the colored dough rise in separate containers.
-
When the dough has fermented to 1.5 to 2 times its original size, you can add the ingredients. Take an appropriate amount of dough and cut it into small pieces to make the edges, not too big. Cut the mixture into small strips. Take a jujube and wrap the rolled noodles around the jujube placed vertically. Pinch the ends of the noodles to form a drop shape. Pinch out a few of this shape and use them as rims. You can also choose the color of the rims according to your own preferences.
-
Take a piece of dough and use a rolling pin to roll out a piece of dough as a base. The thickness should be moderate, not too thin.
-
Make a circle according to the curvature of the base. The center of the circle is filled with jujubes.
-
Roll out another dough piece and cover the area covered with jujubes in the center of the circle.
-
Spread another dough piece larger than the previous step as a top cover.
-
Take the green dough and roll out a piece of dough, carve out the shape of a lotus leaf and press out the veins. Make another small ball, shape it into a lotus shape and press out the lotus seeds.
-
Make Jinli. Take a small piece of plain dough and stick some small colored dough on it.
-
Sprinkle a little flour into the mold, press the dough into the mold, and press the dough with appropriate force to make the pattern clearer.
-
Just tap the mold lightly and the brocade is ready.
-
Use pink flour to make petals, and form six petals to form a blooming lotus, and form three petals to form a lotus bud.
-
According to your own preference, install all the components on the top cover respectively, and then perform secondary fermentation after fixing them. Observe that the volume has increased and the surface of the dough is fluffy and rising. Steam it in a pot and cook it for 25 minutes. Please increase or decrease the steaming time according to the size. When mature, use a pigment pen to draw golden eyes according to personal preference.
