Main ingredient: eggs, I use free-range eggs. Shrimps are also alive.

Beat the eggs, add a little salt to taste, add a little oil to stir, add water, the ratio of water to eggs is 2:1 (more than twice the water will make the eggs more difficult to shape, too little water will make them not smooth and tender. Measure between 1.5 and 2 times), it is best to use warm water, which is more tender than cold water (personal feeling, of course, it mainly depends on the quality of the eggs).

Beat thoroughly, and after stirring, sift (the advantage of sifting is that it can reduce the bubbles generated during stirring and the remaining impurities of unbeaten eggs. If not sifted, it is best to use a container to remove the air bubbles on the top before steaming. Otherwise, the top will be uneven and unsightly after steaming).

Seal it with plastic wrap, boil the water first, and then put the egg container into it. Minimize shaking to avoid bubbles. (If there is no plastic wrap, you can cover it with a lid or a plate to prevent water vapor from entering. There are two disadvantages of water vapor entering: 1. The surface is not smooth, which affects the appearance; 2. The entry of water vapor will increase the proportion of water, either the steaming will fail, it will not solidify, and it will not take shape. Or there will be an extra layer of water on the surface.)

Steam for about 8 to 10 minutes, then put the shrimp in and arrange them. While the pot is off, you can start processing the shrimp. Open the back, remove the shrimp lines and shells, leaving the head and tail. (You can also put other things, such as minced meat, green beans, corn, and scallops.
