Sesame balls
Overview
The texture of sesame balls is sweet and soft. It is a snack that many friends like and they are often made at home during New Years and holidays. This time, the stuffing inside is stuffed with shredded cheese. When fried, it is full of milky flavor and long strings of cheese are pulled out. Peel and slice the sweet potatoes and steam until tender. It is very convenient to steam the sweet potatoes at the same time as you steam the rice (no need to separate the water). Remove the steamed water in the plate.

Put the sweet potatoes in a cooking bowl, add white sugar and mash them into mashed potatoes while hot (I got 450g of mashed potatoes).

Let the mashed potatoes dry until they are not hot to the touch, add glutinous rice flour and baking powder and knead into a smooth dough.

Divide the dough into 40g pieces and shape into a round shape. Place 5g of shredded cheese in the middle and wrap tightly upwards to form a round ball.

Press and roll in the sesame seeds a few times, so that the surface of the dough is covered with sesame seeds, and a sesame dough ball is ready.

Repeat the above two steps to make all the dough balls.

Heat the corn oil over high heat until it is 50% hot (150 degrees). Turn to medium to low heat to maintain the temperature. Add the sesame balls and fry them constantly, flipping until the surface is golden. Filter out and place on oil-absorbing paper. Let it dry for a while and it will taste better when eaten hot.
