Stir-fried Bitter Gourd with Beef

In summer, you need to eat bitter melon to clear away heat. Beef is high in protein and tastes delicious.

  1. Wash the bitter melon and cut it in half and prepare a spoon.

  2. Use a spoon to scrape out the pulp inside.

  3. Cut into shreds, sprinkle with salt, and rub with your hands to remove a bit of bitterness and keep the bitter melon crisp.

  4. Cut the beef into shreds, add shredded ginger, minced garlic, cooking wine and salt to taste. Add a little more starch when frying to keep the beef smooth and tender.

  5. When the oil is hot, add beef and stir-fry.

  6. After the beef is fried and changes color, add shredded ginger, minced garlic and shredded green pepper and stir-fry until fragrant, then add in bitter melon and stir-fry, be sure to add some black bean sauce when you put it in the pot to enhance the flavor!

  7. Add salt and seasonings and serve.
