Homemade date paste filling
Overview
I like to make all kinds of fillings myself. Although the process is cumbersome and time-consuming, you can also add the sweetness according to your own preferences. There are no additives, only rock sugar and red dates are used as the date paste filling. It is cooked over slow fire. It is a great filling for replenishing qi and blood. Desserts such as cakes, pastries, and moon cakes can also be made.

Soak the red dates in water for one hour.

Use a knife to remove the core (this process is time consuming).

Add water just enough to cover the red dates, add rock sugar, bring to a boil over high heat and then simmer over low heat for about 20 minutes.

Put the cooked red dates in the pot and wait until they cool down naturally.

Break the cooked red dates finely with a cooking stick.

Then put it on a sieve and sift it to form a fine jujube paste.

Return the jujube paste to the pot and simmer over low heat. (Stir constantly in the middle)

Stir slowly to avoid sticking the pot, and cook until thick.
