Cut the red dragon fruit into small pieces, add a cup of water, and put it into a juicer to make juice. (If you don’t have red dragon fruit, using the skin of the dragon fruit to make juice will have the same effect)

Strain the dragon juice and set aside.

Wash and peel the lotus roots.

Slice the lotus root.

Blanch the lotus root slices for a minute or two.

Drain the lotus root slices into cold water and set aside.

Cut the lotus root slices into flower shapes.

Soak the lotus root slices in the dragon juice.

Add a tablespoon of white vinegar.

Add a spoonful of sugar.

Seal and place in the refrigerator for a few hours.

It's amazing when you take out the lotus root slices and put them on the plate.
