Pan-fried amaranth noodle rolls
Overview
I bought a bunch of amaranth in the supermarket, juiced it and fried it in flour rolls. It is said that amaranth is rich in iron, calcium and vitamin K, which can promote blood coagulation, increase hemoglobin content, and promote hematopoietic function. It is beneficial to strengthen the body and improve the body's immunity.

Pick amaranth leaves, wash them, boil them in a little boiling water, crush them in a juicer, and filter them into juice. I used about 150ml of amaranth juice.

Mix 300 grams of flour, 3 grams of yeast, amaranth juice and ferment for about 1 hour.

Knead the risen dough, roll it into a large piece, apply some olive oil and sprinkle some salt.
