Wash the ribs.

Put cold water into the pot and blanch the onion, ginger and cooking wine.

Prepare accessories.

Put the blanched ribs into the pot together with the auxiliary ingredients, including ginger, garlic, red pepper, bay leaf, and pepper.

Add a tablespoon of soybean paste.

Bring to a boil over high heat, add light soy sauce, dark soy sauce, and rock sugar. Add the appropriate amount according to your own taste. There is no exact number.

Lower heat and simmer for 50 minutes.
