The sweet potatoes are steamed and pressed into a puree, the flour and yeast are mixed, and the sweet potato puree is used to knead the dough.

Knead into a smooth dough, cover with a damp cloth and leave in a warm place to ferment.

The fermented dough is twice as big as before, and you can see a dense honeycomb shape when you tear it open.

Take it out and put it on a chopping board, knead it to release the air, and divide it into small doses (mine is about 60g).

Roll into long strips with thick round ends.

Tie a long strip into a knot, pinch the left end into a pointed point to make the bird's mouth, and flatten the other end with your hands to make the bird's tail.

Press out the shape of the tail and stick two red beans on both sides of the head to make eyes.

Place into a steamer, cover and ferment until almost doubled in size.

Steam in a pot with cold water. Bring to a boil over high heat, then turn to medium heat and steam for 15 minutes. Turn off the heat and steam for another 5 minutes with the lid off.
