  1. All materials are ready;

  2. Soak the long beans in salt water for 20 minutes to remove pesticides and wash them. Cut the dried chilies into circles, shred the ginger, and chop the garlic;

  3. Bring water to a boil in a pot, add long beans and blanch until cooked, about 3 minutes;

  4. Take out the long beans and quickly put them into a large bowl of cold boiled water. If possible, you can add a few ice cubes to the cold boiled water in advance;

  5. Each long bean is divided into two equal parts and wound into circles;

  6. Take another pot, add an appropriate amount of oil and heat it until it is 50% hot, add dried chili peppers, shredded ginger and minced garlic and sauté until fragrant;

  7. When the dried chili peppers are shiny red and the garlic foam is slightly burnt, carefully remove the chili peppers, shredded ginger and garlic paste, and place them on top of the long beans. Continue to add light soy sauce, white sugar, fermented bean curd juice, salt and water starch to the original pot;
