Pour an appropriate amount of salad oil into the wok. If the oil is not hot, add the chopped minced meat to prevent it from sticking to the pan. Stir-fry the minced meat until it is cooked. Add 1 tablespoon of dark soy sauce. Add salt to taste. Stir-fry until cooked and set aside.

In another pot, add more oil. When the oil is hot, add the sliced eggplants and fry until the surface of the eggplants is golden brown and the flesh is soft and tender. Dish out and set aside

After taking out the eggplant, pour out the oil from the pot, leaving only a small amount. After heating, pour in the minced garlic that has been cut in advance and stir-fry (leave a small amount of minced garlic and add it to the pot at the end). Add the minced meat and stir-fry. Add a mixture of soybean paste, light soy sauce, steamed fish soy sauce, salt and a small amount of water. After it boils, add the fried eggplant in advance, stir-fry and cover the pot for two minutes
