Let it rise until doubled in size. Just press the dough and it will not shrink back. Now in winter, I put it in the oven to ferment for 45 minutes to 1 hour. If you don’t have an oven, you can let it rise in water. Stay away from the water and don’t scald the dough

Put it in a steamer, put cold water in the steamer, need cold water, let it stand for 5 to 10 minutes, let it ferment for the second time, turn on the heat, steam for 15 minutes after the water boils (enough), turn off the heat, don't open the lid immediately (just wait a few minutes for the steam in the pot to go down, otherwise the steamed buns will deflate), just open the pot after 5 minutes
