Overview
This is the melon seed candy I want to make. The thin slice is only as thick as a melon seed or one and a half melon seeds. Spread out the melon seeds mixed with syrup as much as possible and roll them flat so that they have a thin shape. However, here is the problem. The larger the body surface area, the faster the heat dissipation. This thin piece of melon seed candy will cool down quickly in this temperature. This means that it must be shaped and cut into pieces before it cools, otherwise it will not have a neat square shape and a lot of debris will be cut out. I just have this much of a cutting board spread out. If there were more, I might be at a loss. The effect is pretty good, very crispy. . .
