Overview
Ice pork is actually fatty pork refined with soju and sugar. Mix the fat meat with a large amount of sugar and an appropriate amount of shochu, then marinate it for a few days to make ice meat. The marinated fat meat is as white as ice and translucent, so it is called ice meat. The ice meat is sweet and refreshing, not fat or greasy. It is said that the taste is due to a chemical reaction between the sugar soju and the fat meat, which removes the greasiness in the meat. Bing meat often appears in moon cake fillings. In the past, I was reluctant to use it because of the shiny fat. This year, I wanted to try the most old-fashioned mooncake, so I decided to try the mooncake with ice meat.
