Duck blood vermicelli soup
Overview
Duck blood vermicelli soup is one of Nanjing's famous Jinling snacks. The thick duck soup is filled with vermicelli, duck blood, duck liver, duck gizzards, duck liver, and fried tofu, and is delicious. It’s also easy to cook at home. What I made is a simple home version, which eliminates the complicated steps of using duck to make soup and just uses duck soup instead. You can also use stock

Prepare the materials and cut them for later use

Add duck soup to the pot, add ginger slices, scallion oil and tofu, bring to a boil, add some salt, cooking wine, and chicken essence

Add vermicelli and cook, then scald the duck blood

Put the cooked ingredients into a bowl

Place the cooked duck liver, duck gizzards and duck intestines in a bowl and sprinkle with coriander and it is ready to eat
