Chop the ginger and garlic into fine pieces. Cut the dried chili into 3 sections. If you like it spicy, add more

Slice the beef, try to cut against the stripes

Add oil, stir-fry ginger, garlic and chili until you can smell the aroma. Do not stir for too long as the chili will burn

Add the beef and stir-fry until the surface of the beef is slightly charred. Add the soy sauce and continue to stir-fry until the soy sauce is evenly distributed. Add water. The amount of water must not be more than the beef. About 5~10 minutes

When there is only a little water left in the pot, add the potato slices and stir-fry until all the water dries up. Test whether the potatoes are cooked. If not, add a small amount of hot water and simmer for a while
