Overview
Amaranth has high nutritional value, and you eat it more often in summer. Most of the time, you add some garlic and stir-fry. Today, I added some preserved eggs. It is just as delicious, but the taste is more complex and the nutrition is more.

Prepare the ingredients.

Leave the head of the rice amaranth and remove the stem.

Peel and cut preserved eggs into cubes.

Heat oil in a pan and add washed rice amaranth.

Stir fry over high heat for ten seconds.

Add preserved eggs and stir well.

Add a little salt and a little water and cook over high heat for a few seconds.
