Rinse the dried whitebait and soak it in water. Cut the coriander into sections and the red pepper into diagonal sections.

Add oil to a hot pan. Add more oil than usual when cooking. Drain the water from the whitebait. Stir-fry over low heat until the fish body becomes golden brown and crispy. Add a small spoonful of cooking wine and stir evenly.

Add red pepper and stir-fry together. After the spiciness comes out, add coriander and stir-fry until raw. Add a little salt and chicken essence to taste.
