Rock Sugar Duck

I always thought that this fairy-like dish would be very complicated to make, but after finding out the secret, I realized: it’s too simple! However, you are a master if you can cook simple dishes!

Fresh local duck, the leaner the duck, the better

Wash and cut into long flat pieces, beat the ginger into flat pieces

Heat oil in a pan, add ginger cubes and wipe the pan

Add duck cubes, light soy sauce, low-alcohol rice wine, and rock sugar, stir well, and keep on high heat until boiling (no need to add other seasonings, no need to cover the pot)

Turn to medium to low heat and stir-fry five or six times to allow the duck meat to be evenly flavored

Simmer until the water dries up, the sweetness becomes more and more intense, and the duck meat is coated in ice syrup and turns bright red, then it is ready to be cooked
