For the fish you bought, first remove the internal organs, gills, eyes, wash the fish blood, scrape off the scales and fins, then apply salt and marinate, let it sit for 20 minutes, wash off the salt on the fish, this is the action of removing the fishy smell, then adjust the marinade, put the washed fish in to marinate, the marinade contains salt, rice wine, sugar, taste it yourself, if you like it, try to soak the fish in the juice, if you can't help, just soak it every time Stir it for 20 minutes to soak the ones that have not soaked in juice. After about 1 hour, you can pour out the marinade. If you still want to use it next time, put it in a container and freeze it (the old marinade). After it has tasted, you can hang it in a vent out of the sun to air-dry for 12 hours. Bag it and freeze it. You can eat it anytime you want. You can bake or fry it. If you want to dry it overnight, write it down and dry it overnight. Try to choose fish with more oil.
