Prepare the purple potatoes, wash and peel them (do the same for taro and sweet potatoes later), tapioca flour, and fine sugar

Cut the purple potatoes into cubes and steam them in a pot until soft.

While the purple sweet potatoes are hot and easy to mash, take them out and crush them with a spoon.

Add tapioca flour and fine sugar and knead into dough. If it's too dry, add some hot water.

Knead into strips and cut into small pieces.

If you can’t finish it, you can put it in the refrigerator to freeze.
