Prepare the materials, put the digestive biscuits into a breaker or food processor, and grind the biscuits into biscuit powder.

Heat butter over water until melted.

Crush repeatedly to mix digestive biscuits and butter.

Spread the mixed digestive biscuits on the bottom of the cake mold, press it tightly and put it in the refrigerator for half an hour

Put the pitaya into the wall breaking machine. Select the fruit and vegetable function and blend into pitaya puree. Use a strainer to filter out part of the pitaya fruit. Some of it has been broken.

Heat the pitaya puree slightly over low heat, add 20g of gelatine powder, stir constantly to dissolve the gelatine powder, do not boil, let the pitaya puree cool and set aside.

Add powdered sugar to the light cream, place a basin of ice water on the bottom of the bowl, and beat at medium speed. The cream is whipped to 6.7%, and the cream has light texture.

Mix the light cream into the pitaya puree in 3 batches, mix quickly and evenly, and make it smooth and smooth without lumps.

Pour the dragon fruit mousse liquid into the cake mold and gently shake out any big air bubbles.

Place in the refrigerator for 3 hours and freeze for an additional 20 minutes before unmoulding.
