After cleaning the bones, add water to the pot, add ginger cubes, green onions, and cooking wine.

After boiling, skim off the foam. The soup was big, so I simmered it on high heat for half an hour.

Heat oil in a cold pan, add a few Sichuan peppercorns and fry over low heat until fragrant. Add home-pickled red pickled peppers and stir-fry over low heat for a while.

Add the soaked sauerkraut and stir-fry (I couldn’t buy Northeastern sauerkraut, so I used the common Liji sauerkraut instead)

Pour in the bones and soup

Light soy sauce, salt to taste

Simmer for another 15 minutes and serve.
