White chopped Wenchang chicken
Overview
White chopped chicken is one of our Hainanese’s favorite traditional dishes. This dish must be on the dining table every time there is a Chinese New Year or a festive occasion. We have never gotten tired of eating this flavor since we were kids!

Wenchang Chicken cleaned up.

Put an appropriate amount of water into the pot, put the chicken into the pot, and bring to a boil over high heat.

After the water boils, turn to medium heat and continue cooking. Turn the chicken over in the middle so that the parts not submerged in the water can be cooked.

It takes about 25-30 minutes to cook, but this depends on the size of the chicken. I prefer the chicken to be fully cooked so I cook it for a longer time. Some people like the chicken to be 8-9 cooked so I cook it for a shorter time.

After the chicken is cooked, take it out and pour out the chicken soup from the pot, leaving about a small bowl of chicken soup.

Bring remaining chicken stock to a boil and reduce heat to low. Add salt, chicken essence and pepper. You can add a little more salt, because there is no salt when cooking the chicken, and the chicken has no flavor. The taste will be better if it is salty.

Put the chicken into the pot and pour the salty soup over the chicken's body, including its belly. Until the soup is almost dry

Take the chicken out, cut it into pieces and serve immediately.
