  1. Wash the kumquats and soak in salt water for 20-30 minutes. Remove the seeds from the kumquats, slice them into shreds or cubes, just chop them as little as possible. Put kumquats and rock sugar into a pot together in a ratio of 2:1, add water (just enough to cover the kumquats), bring to a boil over high heat, then reduce to low heat

  2. Cook on low heat for about two hours until the kumquats are very soft and mushy, then switch to high heat and begin to absorb the juice. Keep stirring while the juice is collecting to prevent it from sticking to the pan. When the juice is very thick, turn off the heat. When it is warm, add honey (kumquat:honey=5:1)

  3. The time spent drying the kumquat juice in the previous step can be used to sterilize the glass bottle. It can be sterilized in boiling water or in an oven.

  4. Bottle the honey kumquats while they are still warm and close the lid tightly. This will provide a better seal than bottling after cooling. When you want to drink it, take a big spoonful and mix it with some warm water. The candied fruit pulp is accompanied by the sweet and slightly sour sugar water. It’s so delicious that you can’t stop eating it
