Stir-fried loofah with tomatoes
Overview
Tomatoes and loofah are both seasonal vegetables in summer and are rich in nutrients. When fried together, they are sour, fresh and sweet. They can increase appetite and reduce stomach bloating and food accumulation. They are very suitable for consumption in hot summer.

Peel the loofah and cut into pieces

Wash the tomatoes, blanch them in boiling water, peel and cut into pieces

Heat oil in a pan, add minced garlic and sauté until fragrant, add tomatoes into the pan and stir-fry until red juice comes out

Add the loofah and stir-fry, add a small amount of water, cover the pot for 4 or 5 minutes until the loofah is cooked and soft

Add salt to taste and serve
