It’s my first time to try this dish. It doesn’t look very good, but it tastes great. Haha ~ I love eating fried food recently and my appetite is also very good. I lost six pounds a while ago.   1. Peel the round pumpkin and cut into thick strips for later use (I forgot to take a photo, please see the finished product in the steps below😄)

  2. I happened to have salted duck eggs at home, so I didn’t buy the vacuum-packed egg yolks. The salted duck eggs placed at room temperature could be used directly after peeling off the yolks. (If it is a vacuum-packed egg yolk, it will be a bit hard, so you need to steam it for a while in advance, then crush it with a spoon and set aside)

Use a knife to cut a little butter, about a tablespoon, add a few drops of warm water and rub it lightly, spread it on the pumpkin strips, then sprinkle an appropriate amount of starch and mix well. It is best to mix it with your hands. (I forgot to take a photo because my hands were sticky at the time)

  4. Put enough oil in the pot to just cover the pumpkin strips. When the oil is 50% hot, add the pumpkin strips. Fry over medium-low heat until the pumpkin is slightly crispy on the outside and cooked on the inside (about a minute). Take it out

  5. Pour out most of the oil for frying the pumpkin, leaving only a small amount of base oil and heat until just smoking, then turn off the heat. Add the peeled salted egg yolk and crush it with a frying spoon. In order to control the heat, I completed this step with the heat off. Then add appropriate amount of sugar according to personal preference and stir.

  6. Turn on the heat again and heat over medium-low heat until the egg yolk becomes foamy (as shown in the picture)

  7. Add the fried pumpkin strips to the pot or stir gently for a few times, turn off the heat, and be careful not to break the pumpkin into pieces, because the fried pumpkin is already ripe and will be soft and easy to rot. (In the picture, I feel that I put in less sugar before and added a little more. Some of the sugar grains did not melt when I ate it, but it felt quite sweet, haha)
